RPL for Certificate III in Commercial Cookery SIT30821 — Nationally Recognised Qualification
Already working as a cook or chef in a restaurant, hotel, café or catering operation? Your kitchen experience may support an RPL pathway towards SIT30821. Right Pathway helps you prepare workplace evidence; a partner Registered Training Organisation assesses competency and issues the qualification if all requirements are met.
What is RPL for the Certificate III in Commercial Cookery (SIT30821)?
Recognition of Prior Learning (RPL) allows a Registered Training Organisation (RTO) to assess existing cooking skills and knowledge against the SIT30821 Certificate III in Commercial Cookery requirements. The qualification comprises 25 units: 20 core and 5 electives. Right Pathway supports initial eligibility enquiries and kitchen evidence preparation Australia-wide. It is not an RTO and does not assess competency or issue qualifications. Practical assessment, additional evidence or gap training may be required.
About the SIT30821 Certificate III in Commercial Cookery
The SIT30821 Certificate III in Commercial Cookery is listed as current on training.gov.au, Australia's National Register of vocational education and training. Release 1 is dated 10 June 2022. It supersedes, and is equivalent to, SIT30816.
This qualification reflects the role of cooks who use a wide range of well-developed cookery skills and sound knowledge of kitchen operations to prepare food and menu items. They use discretion and judgement, work with some independence and under limited supervision, and follow workplace plans, policies and procedures.
Completion contributes to recognition as a trade cook. It does not automatically establish eligibility for a migration skills assessment, visa, job or licence. If your responsibilities focus on managing staff, budgets and venue operations, also explore Diploma of Hospitality Management RPL support; that is a separate qualification pathway.

Who Can Apply for RPL?
These roles may provide relevant experience. Eligibility depends on demonstrated skills across the required units, not job title or years of service alone.
Cooks & Chefs
Experienced cooks and chefs preparing food across kitchen sections in restaurants, hotels, clubs, pubs or cafés, with evidence of a broad range of cookery skills.
Hotel & Resort Kitchen Staff
Kitchen staff who have progressed to preparing full menu items across service periods. Cleaning or basic kitchen-hand duties alone may not cover the required competencies.
Catering & Events Cooks
Cooks in catering companies, event venues, aged care or institutional kitchens with relevant food preparation, service, hygiene and kitchen operations experience.
Asian Cuisine Specialists
Cooks experienced in Asian cuisines whose work may support relevant electives. The RTO must also establish competency across all mandatory commercial cookery core units.
Café & Coffee Shop Cooks
Cooks preparing varied breakfast and lunch menus in commercial café kitchens. A narrow menu or limited preparation duties may leave gaps in the required skills.
Pastry & Dessert Specialists
Cooks with pastry, baking and dessert experience alongside broader cookery duties. Pastry-only experience may not cover every core unit in Commercial Cookery.

Start Free Eligibility CheckWhat Evidence Do You Need?
RPL requires evidence against the selected units. The RTO decides whether evidence is valid, sufficient, authentic and current, and may require practical assessment. Examples that may support a SIT30821 portfolio include:
- Employment records — payslips, contracts and letters confirming your role and duration
- Position descriptions — showing your cookery duties across kitchen sections
- Menu samples — linked to dishes you personally prepared or helped develop
- Photos or videos of your work — identifiable food preparation, cooking and presentation activities
- Food safety certificates — with statements of attainment where available
- Kitchen records or logs — temperature records, cleaning schedules and food safety documentation
- Recipes or prep sheets — showing your preparation methods, quantities and costing work
- Stock and ordering records — showing involvement in receiving, storing and maintaining stock
- Third-party reports — head chef or employer accounts of observed workplace skills
- Referee letters — describing your responsibilities and specific kitchen activities
- Previous qualifications — cookery, hospitality or food safety records for RPL or credit transfer consideration
💡 What kitchen evidence might you already have?
Your everyday kitchen work may already provide useful records. Evidence must demonstrate your own skills and responsibilities; a menu, photo or payslip alone does not establish competency across all units.
Common sources include:
- Payslips and employment records showing kitchen roles
- Menus linked to dishes you personally prepared
- Food safety certificates and statements of attainment
- Photos or videos documenting your kitchen work
- Detailed references from a head chef or employer
Right Pathway helps organise evidence. Obtain permission to share workplace records and protect confidential information in consultation with the RTO.
⚠️ Important: Overseas Experience
Overseas cooking experience may support RPL if the RTO can verify it and assess it against Australian unit requirements. Translations, referee verification or further practical assessment may be needed. Check your eligibility here.

Build Your Evidence Portfolio
Right Pathway helps you identify and organise kitchen evidence. The partner RTO sets assessment requirements and may request further records, questioning, demonstrations or observation of practical skills.
RTO Assessment & Qualification
The partner RTO independently assesses competency and issues SIT30821 only when all qualification requirements are met. Further assessment or gap training may be required where skills or evidence are insufficient.
