About the SIT30821 Certificate III in Commercial Cookery

The SIT30821 Certificate III in Commercial Cookery is the current, nationally recognised trade qualification for cooks in Australia. Released on 10 June 2022, it supersedes the previous SIT30816 (equivalent) and reflects the latest industry standards set by the Australian Skills Quality Authority (ASQA).

This qualification reflects the role of cooks who use a wide range of well-developed cookery skills and sound knowledge of kitchen operations to prepare food and menu items. Using discretion and judgement, they work with some independence and under limited supervision using plans, policies and procedures to guide work activities.

Completion of this qualification contributes to recognition as a trade cook — a significant professional milestone for kitchen workers in Australia.

What Evidence Do You Need?

RPL is evidence-based. You don't need to study — you need to demonstrate that you already have the skills. Here's what typically counts as valid evidence for SIT30821:

  • ✔️ Employment records — payslips, contracts, letters confirming your role and duration
  • ✔️ Position descriptions — showing cook or chef duties across kitchen sections
  • ✔️ Menu samples — menus you have cooked from or contributed to creating
  • ✔️ Photos of your work — plated dishes, kitchen setup, food preparation
  • ✔️ Food safety certificates — Food Handler or Food Safety Supervisor certificates
  • ✔️ Kitchen records or logs — temperature logs, cleaning schedules, HACCP records

Yes — SIT30821 is the equivalent replacement for SIT30816, which was superseded in June 2022. The qualification name remains "Certificate III in Commercial Cookery" and carries the same national recognition as a trade cook qualification. Always ensure your RTO is enrolling you in the current SIT30821 code.

A food safety certificate is helpful evidence but is not a mandatory requirement to begin the RPL process. The SIT30821 includes food safety units (SITXFSA005 and SITXFSA006), and your assessor will evaluate your practical food safety knowledge through your evidence portfolio and workplace experience.
